Is there a method to over-ride the default Quick Search fields with another type of search options:
Date Columns - Date Range Search
Text Columns - Multi-Select Menu of the Column (Grouped)
Appreciate any direction you can offer.

Yes there is. There is a function named fieldTypeSearchColumn. You can find the documentation here: fieldTypeSearchColumn | Grocery CRUD - A PHP CRUD Generator Library
